Con un alto contenido en fibra, estimula el tránsito intestinal y aumenta la sensación de saciedad. Posee almidón resistente, un hidrato de carbono que se absorbe lentamente, regula el paso de la glucosa a la sangre, evitando picos de glucemia, lo que lo convierte en un alimento ideal para diabéticos, deportistas y para perder peso, según sus defensores. Por su alto contenido de vitamina E, presenta una alta acción antioxidante, aumenta el metabolismo y reduce la acción de los radicales libres. Se le considera una «bomba» de minerales: cuenta con calcio, magnesio, potasio, hierro, zinc y vitaminas del grupo B que se absorben sin dificultad. Es idóneo para celíacos, diabéticos y personas con carencia de calcio. Posee más hierro, potasio y fósforo que la quinoa.

Es el teff, un cereal nativo de Etiopía, donde se consume a diario desde hace siglos. Lo más curioso de todo es que se ha convertido en el cereal que más desea el mundo hoy en día. Está atrayendo las miradas del resto de los países más avanzados, tanto que podría convertirse en el nuevo ‘supergrano’ para los mercados europeo y norteamericano, superando a la quinoa y a la espelta.

El teff es un cereal conocido como el trigo de Etiopía, ya que es el alimento básico del país africano desde hace más de 5.000 años. Con él se fabrican unas tortitas llamadas ‘injera’ (se elabora con la harina de teff que se mezcla con el agua, se deja reposar a temperatura ambiente hasta que se llena de burbujas y agria en unos tres días).

Otra curiosidad es que es el grano más pequeño del mundo. El grano de teff no supera los 1,7 milímetros de alto por uno de ancho. Su tamaño es similar al grano de amapola. Unos tres mil granos pesan sólo un gramo.

Sus propiedades nutritivas y su versatilidad están haciendo que el cultivo se esté expandiendo por el Viejo Continente, América del Norte y Japón.

La empresa holandesa Ecosem Europa, que cuenta con la única licencia del Gobierno de Etiopía para la producción de este cereal fuera de su territorio, posee la patente para el cultivo de la semilla del teff ecológico.

Desde 2010 el cereal se cultiva en diferentes partes de España, principalmente en los campos de Castilla y León, en las provincias de León, Salamanca, Valladolid, Palencia y Zamora, con resultados alentadores.

El Gobierno etíope suspendió la exportación del teff en crudo en el 2006, ya que el aumento de los precios del grano provocó temores sobre una crisis alimentaria.

La prohibición de exportarlo fue parcialmente levantada en 2015, después de que las inversiones en la mecanización y mejores técnicas de cultivo aumentaran los rendimientos en un 40%. El teff es el producto más importante del país en producción y consumo. Es el sustento de más de 6,5 millones de pequeños agricultores.

Cada año la demanda por parte de los extranjeros aumenta entre un 7% y un 10%. En Estados Unidos la harina de teff tiene un precio de venta de entre 6 a 10 dólares la libra.

El teff es el cereal que más consumen los corredores de Etiopía, porque es ideal para el rendimiento deportivo. Algunos famosos, como Victoria Beckham y Gwyneth Paltrow, se han declarardo grandes consumidoras del teff. Tiene un sabor suave y dulce.
